A Workshop on Traditional Japenses Fermentation, Its History, and its Modern Application Fermentation

The presentation will be in English and will include a small tasting.
An introduction to uniquely diverse methods of fermentation used in Japan. Starting from the history and tradition of these methods to their uses in modern-day Japan and their spread and uses all over the world. Dylan and Spencer from restaurant ernst will present their research on the subject along with their uses of the methods using german ingredients.
